Method

Preparation

  1. 1

    Prepare the Marinade

In a large bowl, combine the olive oil, minced garlic, chopped parsley, lime juice, salt, black pepper, cumin, and paprika. Whisk until well combined.

  2. 2

    Marinate the Meat

Place the flank or skirt steak into a large resealable plastic bag or shallow dish. Pour the marinade over the meat, ensuring it's well coated. Seal the bag or cover the dish and refrigerate for at least 4 hours, preferably overnight.

Grilling

  1. 3

    Preheat the Grill

Preheat your grill to medium-high heat. Ensure the grill grates are clean and lightly oiled to prevent sticking.

  2. 4

    Grill the Meat

Remove the steak from the marinade and let excess marinade drip off. Place the steak on the grill and cook for about 6-8 minutes on each side for medium-rare, or until desired doneness is reached.

  3. 5

    Rest and Serve

Once cooked, remove the steak from the grill and let it rest for 5-10 minutes before slicing. This allows the juices to redistribute. Slice against the grain and serve immediately.
