Mousse Base Preparation

    Melt the Chocolate

    Begin by melting the dark chocolate. Place the chocolate in a heatproof bowl and set it over a pot of simmering water (double boiler method), stirring occasionally until smooth. Remove from heat and let it cool slightly.

    Prepare Egg Mixture

    In a separate bowl, separate the egg whites from the yolks. Add the granulated sugar to the egg yolks and whisk until pale and creamy. Stir in the melted chocolate and vanilla extract until well combined.

    Incorporate Egg Whites

    In another clean bowl, beat the egg whites with a pinch of salt until stiff peaks form. Gently fold the whipped egg whites into the chocolate mixture, being careful not to deflate the mixture.

    Refrigerate Mousse

    Pour the mousse mixture into individual serving dishes or a large bowl. Cover and refrigerate for at least 2 hours or until set.

Whipped Cream Preparation

    Start Whipping Cream

    In a large bowl, pour the heavy whipping cream. Using an electric mixer, beat the cream on medium-high speed until it begins to thicken.

    Add the powdered sugar and vanilla extract to the cream. Continue beating until soft peaks form and the cream is fluffy.

    Serve with Whipped Cream

    Once the mousse has set, top each serving with a generous dollop of whipped cream.
