    Prepare the Fish

    Cut the corvina fillet into small, bite-sized cubes (approximately 1 cm). Place the cubes in a non-reactive bowl.

    Pour the lime juice over the fish cubes, ensuring they are fully submerged. Add the fish stock to the bowl. Cover the bowl with plastic wrap and let it marinate in the refrigerator for about 30 minutes, or until the fish appears opaque.

    While the fish is marinating, finely chop the red onion, bell pepper, and cilantro. Set aside in a large mixing bowl.
