Preparation

  1. 1

    Clean the Squid

Ensure the squid is cleaned properly, removing the head, ink sac, and cartilage. Rinse under cold water and cut into rings.

  2. 2

    Chop Vegetables

Finely chop the onion and mince the garlic.

Cooking

  1. 3

    Sauté Onion and Garlic

In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add minced garlic and cook for an additional 1-2 minutes until fragrant.

  2. 4

    Add Squid

Increase the heat to medium-high and add the squid rings to the skillet. Cook for about 2-3 minutes until they begin to turn opaque.

  3. 5

    Deglaze with Wine

Pour in the white wine and let it simmer for about 2 minutes to deglaze the pan, scraping any bits stuck to the bottom.

  4. 6

    Add Sauce Ingredients

Stir in the tomato sauce, paprika, salt, and black pepper. Reduce the heat to low and let the mixture simmer for about 10 minutes, allowing the flavors to meld.

Serving

  1. 7

    Garnish and Serve

Taste and adjust seasoning if necessary. Serve hot, garnished with chopped fresh parsley.
