    Prepare the Boniato

    Peel the boniato and cut it into thin slices or cubes, about 1/4 inch thick.

    Soak the Boniato

    Place the cut boniato in a bowl of cold water and let it soak for about 30 minutes. This helps to remove excess starch and makes the frying process easier.

Frying

    Heat the Oil

    In a large skillet or frying pan, heat the vegetable oil over medium-high heat until it reaches about 350°F (175°C).

    Dry the Boniato

    After soaking, drain the boniato slices and pat them dry with paper towels to remove excess water.

    Fry the Boniato

    Carefully add the boniato to the hot oil in batches, making sure not to overcrowd the pan. Fry for about 4-6 minutes on each side, or until golden brown and crispy.

    Drain and Season

    Once fried, use a slotted spoon to transfer the boniato to a plate lined with paper towels to drain excess oil. While still hot, sprinkle with salt, black pepper, and any optional seasonings you prefer.
