Method

Preparation

  1. 1

    Prepare the Vegetables

Wash and chop the carrots, zucchini, bell peppers, and red onion into bite-sized pieces. Trim the ends of the green beans. Halve the cherry tomatoes.

  2. 2

    Mince the Garlic

Peel and mince the garlic cloves finely.

Cooking

  1. 3

    Sauté the Vegetables

In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.

  2. 4

    Add Vegetables

Add the chopped carrots and sauté for 3-4 minutes until slightly softened. Then, add the zucchini, bell peppers, and green beans. Continue to sauté for another 5-7 minutes, stirring occasionally.

  3. 5

    Season the Medley

Once the vegetables are tender but still crisp, add salt, black pepper, oregano, and thyme. Stir well to coat the vegetables with the seasoning.

  4. 6

    Finish with Tomatoes

Add the cherry tomatoes to the skillet and cook for an additional 2-3 minutes until they start to soften.

  5. 7

    Garnish and Serve

Remove the skillet from heat. Garnish with fresh parsley before serving.
