Wash and chop the carrots, zucchini, bell peppers, and red onion into bite-sized pieces. Trim the ends of the green beans. Halve the cherry tomatoes.

In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
