Prepare the Potatoes
Preheat the oven to 400°F (200°C). Wash and scrub the russet potatoes thoroughly under running water to remove any dirt.

Bake the Potatoes
Place the whole potatoes on a baking sheet and bake them in the preheated oven for about 45 minutes, or until they are tender when pierced with a fork.

Cool and Cut
Remove the baked potatoes from the oven and allow them to cool for about 10 minutes. Once cool enough to handle, cut each potato in half lengthwise.

Scoop the Flesh
Using a spoon, scoop out a portion of the flesh of each potato half, leaving about 1/4 inch of potato on the skin. Reserve the scooped potato for another use.

Bake the Skins
Place the potato skins back on the baking sheet, cut side up, and bake for an additional 10-15 minutes until they are crispy and golden brown.

Add Toppings
Remove the potato skins from the oven. Sprinkle the shredded cheddar cheese and crumbled bacon evenly over the skins.

Melt the Cheese
Return the potato skins to the oven for another 5 minutes, or until the cheese is melted and bubbly.

Remove from the oven and let them cool for a few minutes. Serve warm with a dollop of sour cream and a sprinkle of sliced green onions on top.
