    Sauté the Sausage

    In a large pot or Dutch oven, heat the vegetable oil over medium heat. Add the sliced Andouille sausage and cook until browned, about 5-7 minutes. Remove and set aside.

    Cook the Vegetables

    In the same pot, add the chopped onion, green bell pepper, and celery. Sauté for about 5 minutes until they start to soften. Add the minced garlic and sliced okra, cooking for an additional 2-3 minutes.

    Combine Ingredients

    Return the browned sausage to the pot. Add the diced tomatoes, chicken broth, bay leaves, thyme, paprika, cayenne pepper, salt, and black pepper. Stir well to combine.

Cooking

    Simmer the Gumbo

    Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for about 30 minutes, stirring occasionally.

    Add Seafood

    After 30 minutes, add the shrimp and crab meat to the pot. Cook for an additional 10-15 minutes until the shrimp are cooked through and pink.

Serving

    Garnish and Serve

    Remove the bay leaves from the gumbo. Serve hot, garnished with chopped green onions and parsley. Adjust seasoning with salt, pepper, and hot sauce to taste.
