Prepare the Tomatoes
Wash and slice the green tomatoes into about 1/4 inch thick slices. Lay them out on a paper towel and sprinkle with salt. Let them sit for about 10-15 minutes to draw out moisture.

Set Up Breading Station
In one shallow dish, place the all-purpose flour mixed with black pepper. In a second dish, whisk together the eggs and milk. In a third dish, place the cornmeal.

Heat Oil
In a large skillet, heat the vegetable oil over medium heat until it reaches 350°F (175°C).

Fry the Tomatoes
Carefully place the breaded tomato slices in the hot oil, a few at a time. Fry for 3-4 minutes on each side until golden brown and crispy. Remove and drain on paper towels.
Remoulade Sauce

Mix the Sauce
In a bowl, combine mayonnaise, Dijon mustard, capers, lemon juice, paprika, cayenne pepper, and garlic powder. Mix well until all ingredients are thoroughly combined.

Season
Taste the remoulade sauce and add salt to taste if necessary. Adjust any other seasonings according to preference.
