    Boil the Eggs

    Place the large eggs in a pot and cover them completely with water. Bring the water to a boil over medium-high heat. Once boiling, cover the pot and remove it from the heat. Let the eggs sit for 12 minutes.

    Cool the Eggs

    After 12 minutes, transfer the eggs to a bowl of ice water. Let them cool for about 5 to 10 minutes. This will make peeling easier.

Mixing the Filling

    Peel and Halve the Eggs

    Once the eggs are cool, peel them gently and slice each egg in half lengthwise. Remove the yolks and place them in a mixing bowl.

    Combine Ingredients

    To the bowl with the yolks, add mayonnaise, Dijon mustard, white vinegar, salt, black pepper, and finely chopped chives. Mash the mixture with a fork until smooth and creamy.

Assembling the Deviled Eggs

    Fill the Egg Whites

    Spoon or pipe the yolk mixture back into the hollowed-out egg whites. Fill each egg half generously.

    Garnish

    Sprinkle paprika on top of each deviled egg for color and garnish with additional chopped chives.
