Prepare Chicken
Begin by flattening the chicken breasts to an even thickness using a meat mallet or rolling pin.

Coat Chicken
Dip each chicken breast first in the flour, then in the egg, and finally in the bread crumbs, making sure to coat evenly.

Heat Oil
In a large skillet, heat the vegetable oil over medium-high heat until hot.

Fry Chicken
Carefully place the coated chicken breasts in the skillet and fry for about 5-7 minutes on each side, or until golden brown and cooked through. Remove and drain on paper towels.

Prepare Vegetables
While the chicken is frying, wash and chop the salad greens, slice the cherry tomatoes in half, dice the cucumber, and thinly slice the red onion.

Assemble Salad
In a large serving bowl, combine the mixed salad greens, cherry tomatoes, cucumber, red onion, croutons, cashews, wonton strips, and bacon pieces.

Slice Chicken
Once the chicken is cooked and rested for a few minutes, slice it into strips and place it on top of the salad.
