Preparing the Filling

    Season the Protein

    In a bowl, combine the olive oil, ground cumin, paprika, garlic powder, salt, and black pepper. Add the boneless chicken breast or sirloin steak and coat thoroughly with the seasoning mixture.

    Grill the Protein

    Heat a grill or grill pan over medium-high heat. Cook the chicken for about 6-7 minutes per side, or until cooked through, or grill the steak for about 4-5 minutes per side for medium-rare. Once cooked, let rest for 5 minutes before slicing.

    Slice the Protein

    Slice the grilled chicken or steak into thin strips.

Assembling the Quesadillas

    Heat the Tortilla

    In a large skillet over medium heat, place one tortilla. Sprinkle half of the shredded Monterey Jack and half of the shredded cheddar cheese on one half of the tortilla.

    Add the Filling

    Add a portion of the sliced chicken or steak on top of the cheese. Fold the tortilla over to cover the filling.

    Cook the Quesadilla

    Cook for about 3-4 minutes on one side until the cheese is melted and the tortilla is golden brown, then carefully flip and cook for an additional 3-4 minutes on the other side.

    Repeat for Remaining Quesadillas

    Repeat the process for the remaining tortillas and filling.

    Slice and Serve

    Once all quesadillas are cooked, cut them into wedges and serve hot with guacamole, fresh salsa, and sour cream on the side.
