Cooking Rice

Prepare the Rice
In a medium saucepan, combine 1 cup of rice and 2 cups of water. Bring to a boil over medium-high heat.

Simmer the Rice
Once boiling, reduce heat to low, cover, and let simmer for about 18-20 minutes or until the rice is tender and water is absorbed.

Fluff the Rice
Remove from heat and let sit covered for 5 minutes. Fluff with a fork before serving.
Preparing the Spice Mix and Catfish

Make the Spice Mix
In a small bowl, combine paprika, cayenne pepper, garlic powder, onion powder, dried thyme, salt, and black pepper. Mix well.

Season the Catfish
Pat the catfish fillets dry with paper towels. Rub both sides of each fillet with olive oil and then generously coat with the spice mix.

Blacken the Catfish
Heat a large skillet over high heat. Once hot, add the seasoned catfish fillets and cook for about 3-4 minutes on each side or until blackened and cooked through.

Sauté the vegetables for about 5-7 minutes until they are tender. Season with salt and black pepper to taste.
