Dough Preparation

Activate the Yeast
In a small bowl, combine the warm milk (about 110°F or 43°C) with the active dry yeast and a teaspoon of sugar. Stir gently and let sit for about 5-10 minutes until frothy.

Mix Dry Ingredients
In a large mixing bowl, whisk together the flour, remaining sugar, and salt.

Knead the Dough
Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth and elastic. Place the dough in a greased bowl, cover with a clean cloth, and let rise in a warm place until doubled in size (about 1-2 hours).

Prepare for Frying
Once the dough has risen, punch it down and roll it out on a floured surface to about 1/4 inch thick. Cut into squares (approximately 2x2 inches).

Heat the Oil
In a deep saucepan, heat the vegetable oil to 350°F (175°C). Use a thermometer to ensure the correct temperature for frying.

Fry the Beignets
Carefully drop a few dough squares into the hot oil, being careful not to overcrowd the pan. Fry for about 2-3 minutes on each side until golden brown. Remove with a slotted spoon and drain on paper towels.

Dust with Sugar
While still warm, dust the beignets generously with powdered sugar. Serve immediately.
