Preparing the Shrimp

    Prepare the Shrimp

    Rinse the Gulf shrimp under cold running water and pat them dry with paper towels. Ensure they are thoroughly cleaned and deveined.

Making the Batter

    Mix the Dry Ingredients

    In a large mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, black pepper, and garlic powder. Whisk them together until well blended.

    Combine Wet Ingredients

    In another bowl, beat the egg and then add the cold sparkling water. Mix until combined.

    Make the Batter

    Pour the wet ingredients into the dry mixture. Stir gently until just combined; the batter should be slightly lumpy.

Frying the Shrimp

    Heat the Oil

    In a large, deep skillet or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping a small amount of batter into it; if it sizzles and rises to the surface, it's ready.

    Dip and Fry the Shrimp

    Working in batches, dip each shrimp into the batter, allowing excess to drip off. Carefully place them in the hot oil. Fry for 2-3 minutes on each side until golden brown and crispy.

    Drain and Keep Warm

    Use a slotted spoon to remove the fried shrimp from the oil and place them on a plate lined with paper towels to drain excess oil. Keep warm while you fry the remaining shrimp.

    Prepare the Smiley Fries

    Prepare the smiley fries according to package instructions, either by baking or frying them until golden and crispy.

    Serve the crispy batter-fried shrimp alongside the smiley fries. Garnish with lemon wedges and cocktail sauce on the side.
