Prepare the Cilantro Slaw

Mix the Slaw Ingredients
In a large bowl, combine the shredded cabbage, shredded carrot, chopped cilantro, lime juice, olive oil, salt, and black pepper. Toss until well mixed.

Chill the Slaw
Cover the slaw and refrigerate for at least 30 minutes to allow the flavors to meld.
Prepare the Bang Bang Shrimp

Set Up the Breading Station
In three separate bowls, place the flour, beaten eggs, and panko breadcrumbs. This will be used for coating the shrimp.

Bread the Shrimp
Dip each shrimp first into the flour, shaking off excess, then into the beaten eggs, and finally coat with panko breadcrumbs. Set aside on a plate.

Fry the Shrimp
Carefully add the breaded shrimp to the hot oil in batches, cooking for about 2-3 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

Toss in Sauce
In a large bowl, combine the fried shrimp with the sweet chili sauce, sriracha sauce, and lime juice. Toss until the shrimp are evenly coated.
Assemble and Serve

Plate the Dish
On a serving plate, place a generous portion of the cilantro slaw. Top with the Bang Bang shrimp.

Sprinkle toasted sesame seeds over the shrimp and drizzle with additional sriracha if desired.
