Method
Cooking the Pasta

Boil the Pasta
In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente, usually around 8-10 minutes.

Drain and Set Aside
Once cooked, drain the pasta in a colander and set aside, reserving a cup of pasta water for later use.
Making the Green Chili Sauce

Sauté the Vegetables
In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.

Add Garlic and Green Chilies
Stir in the minced garlic and chopped green chilies. Cook for an additional 2-3 minutes until fragrant.

Incorporate Tomatoes
Add the chopped tomato to the skillet. Cook until the tomatoes are soft and start to break down, about 5 minutes.

Season the Sauce
Season the mixture with black pepper and lime juice. Stir well to combine and let it simmer for 2-3 minutes.

Combine with Pasta
Add the cooked pasta to the skillet with the green chili sauce. Toss well to coat the pasta in the sauce, adding reserved pasta water as needed to reach desired consistency.
Serving

Garnish and Serve
Remove from heat, garnish with chopped cilantro, and serve hot. Enjoy your spicy green chili pasta!
