Method

Cooking Pasta

  1. 1

    Boil Water

Fill a large pot with water and bring it to a rolling boil over high heat.

  2. 2

    Add Salt

Once the water is boiling, add 1 tablespoon of salt to the water to enhance the flavor of the pasta.

  3. 3

    Cook Pasta

Add 8 cups of pasta to the boiling water and cook according to package instructions until al dente, usually around 8-10 minutes.

  4. 4

    Drain Pasta

Once cooked, drain the pasta in a colander and set aside, reserving a small cup of pasta water.

Cooking Vegetables

  1. 5

    Heat Olive Oil

In a large skillet, heat 4 tablespoons of olive oil over medium heat.

  2. 6

    Sauté Garlic

Add 3 tablespoons of minced garlic to the skillet and sauté for about 30 seconds until fragrant, being careful not to burn it.

  3. 7

    Add Vegetables

Add the bell peppers, zucchini, cherry tomatoes, carrots, and asparagus to the skillet. Sauté for 5-7 minutes until the vegetables are tender but still crisp.

  4. 8

    Season Vegetables

Sprinkle in 1 teaspoon of red pepper flakes, salt, and black pepper to taste, mixing well to combine.

Combining and Serving

  1. 9

    Add Pasta to Vegetables

Add the drained pasta to the skillet with the sautéed vegetables and toss everything together.

  2. 10

    Add Reserved Pasta Water

If the mixture seems dry, add a little reserved pasta water to help bring everything together.

  3. 11

    Finish with Cheese

Remove from heat and sprinkle 1 cup of grated Parmesan cheese over the top, tossing to combine until the cheese is melted and everything is coated.

  4. 12

    Serve

Serve hot, garnished with additional Parmesan cheese and fresh herbs if desired.
