Prepare the Patty
In a large bowl, combine the ground beef with taco seasoning. Mix until well combined, then form into two 8 oz patties.

Melt the Cheese
In the last minute of cooking, place aged cheddar cheese on top of the patties and cover to melt.

Prepare the Tortillas
While the patties are cooking, warm the corn tortillas in a separate skillet for about 30 seconds on each side until soft.

Assemble the Burger
Place each patty on a warm corn tortilla. Top with shredded lettuce, diced tomatoes, sliced onions, and a drizzle of Sadie's Red or Green Chile.
