Stuffed Sopaipilla Dinner Recipe

House made sopaipilla stuffed with refried beans, Billy's spice beef, grilled hamburger patty, shredded chicken, or carne adovada. All dinners are smothered with red or green chile or have your chile served on the side. Vegetarian & gluten-free chile available. Your dinner comes with papitas, frijoles, & melted aged Cheddar cheese. Garnished with lettuce, tomatoes, & onions. Served with fresh sopaipillas.

Directions for Preparing Stuffed Sopaipillas

    Prepare the Sopaipilla Dough

    In a mixing bowl, combine flour, baking powder, and salt. Gradually add warm water and mix until a soft dough forms. Knead the dough for about 5 minutes until smooth.

    Roll and Cut the Dough

    Divide the dough into small balls (about the size of a golf ball). Roll out each ball on a floured surface into a circle about 1/4 inch thick.

    Fry the Sopaipillas

    Heat vegetable oil in a deep skillet over medium-high heat. Fry each rolled-out circle until they puff up and turn golden brown, about 2-3 minutes per side. Drain on paper towels.

    Prepare the Filling

    In a separate bowl, mix the refried beans, ground beef, shredded chicken, or carne adovada. Season with salt and pepper to taste.

    Stuff the Sopaipillas

    Once the sopaipillas are cooled slightly, carefully cut a slit on the side of each to create a pocket. Fill each sopaipilla with the prepared filling.

    Serve

    Place the stuffed sopaipillas on a plate, smother with red or green chile sauce, and serve with papitas, frijoles, melted cheddar cheese, lettuce, tomatoes, and onions on the side. Enjoy with fresh sopaipillas!
