Stuffed Bean Sopaipilla Ingredients
Method
Preparation Instructions
- 1
Make the Sopaipilla Dough
In a large bowl, mix the flour, baking powder, and salt. Add the lard or vegetable shortening and rub it into the flour mixture until it resembles coarse crumbs. Gradually add warm water, mixing until a soft dough forms. Knead the dough on a floured surface for about 5 minutes, then cover and let it rest for 30 minutes.
- 2
Prepare the Filling
In a separate bowl, mix the refried beans, shredded cheese, and chopped cilantro until well combined. Set aside.
- 3
Roll Out the Dough
After resting, divide the dough into 8 equal pieces. Roll each piece into a circle about 6 inches in diameter on a floured surface.
- 4
Stuff the Sopaipillas
Place a generous spoonful of the bean and cheese mixture in the center of each dough circle. Fold the dough over to form a half-moon shape and pinch the edges to seal tightly.
- 5
Fry the Sopaipillas
Heat vegetable oil in a deep skillet or fryer over medium heat. Fry each stuffed sopaipilla until golden brown, about 2-3 minutes per side. Remove and drain on paper towels.
- 6
Serve
Serve warm with sour cream on the side for dipping. Enjoy your delicious stuffed bean sopaipillas!
