    Make the Sopaipilla Dough

    In a large bowl, mix the flour, baking powder, and salt. Add the lard or vegetable shortening and rub it into the flour mixture until it resembles coarse crumbs. Gradually add warm water, mixing until a soft dough forms. Knead the dough on a floured surface for about 5 minutes, then cover and let it rest for 30 minutes.

    Prepare the Filling

    In a separate bowl, mix the refried beans, shredded cheese, and chopped cilantro until well combined. Set aside.

    Roll Out the Dough

    After resting, divide the dough into 8 equal pieces. Roll each piece into a circle about 6 inches in diameter on a floured surface.

    Stuff the Sopaipillas

    Place a generous spoonful of the bean and cheese mixture in the center of each dough circle. Fold the dough over to form a half-moon shape and pinch the edges to seal tightly.
