    Prepare the Pork

    In a large pot, add the pork shoulder and cover with water. Bring to a boil, then reduce heat and simmer for about 1.5 hours until the pork is tender.

    Add Aromatics

    Once the pork is cooked, remove it from the pot and shred it. In the same pot, sauté the diced onion and minced garlic until translucent.

    Combine Ingredients

    Add the shredded pork back into the pot along with the hominy, chicken broth, oregano, salt, and pepper. Stir to combine.

    Simmer

    Let the mixture simmer on low heat for about 30 minutes to allow the flavors to meld.

    Serve

    Ladle the posole into bowls and serve with a side of Sadie's Red or Green Chile, and fresh oregano and diced onions on top.
