Main Ingredients

Method

Preparation

  1. 1

    Prepare the Peppers

Roast the green chile peppers over an open flame or in a broiler until the skins are blistered and charred. Place in a plastic bag for 10 minutes to steam, then peel off the skins. Cut a slit down one side of each pepper and remove the seeds.

  2. 2

    Stuff the Peppers

Stuff each pepper with Asadero cheese, ensuring they are filled but not overstuffed.

Batter Preparation

  1. 3

    Make the Beer Batter

In a mixing bowl, combine the all-purpose flour and beer, mixing until smooth. In another bowl, beat the eggs and then fold them into the beer batter.

Frying

  1. 4

    Fry the Stuffed Peppers

Heat oil in a deep frying pan over medium heat. Dip each stuffed pepper into the beer batter, ensuring it is fully coated, and carefully place it in the hot oil. Fry until golden brown, about 4-5 minutes on each side. Remove and drain on paper towels.

Serving

  1. 5

    Plate the Dish

Serve the fried chile rellenos with a side of frijoles, papitas, and your choice of chile sauce.
