Prepare the Dough
In a large bowl, mix together the flour, baking powder, and salt. Add the lard (or vegetable shortening) and mix until crumbly. Gradually add warm water, stirring until the dough comes together.

Turn the dough onto a floured surface and knead for about 5 minutes until smooth. Roll out the dough to about 1/8 inch thickness.

Cut the Sopaipillas
Using a knife or pizza cutter, cut the dough into squares or triangles, about 2-3 inches in size.

In a large, deep skillet, heat about 2 inches of oil over medium-high heat until hot.

Carefully drop the cut dough into the hot oil, frying a few at a time. Fry until they puff up and turn golden brown, approximately 2-3 minutes on each side. Remove and drain on paper towels.
