    Prepare the filling

    In a skillet, heat olive oil over medium heat. Add diced onion and sauté until translucent. Stir in minced garlic and cumin, cooking for an additional minute. Remove from heat.

    Assemble the enchiladas

    Preheat the oven to 375°F (190°C). In a large baking dish, spread a thin layer of chilé sauce on the bottom. Take a corn tortilla, fill it with the sautéed onion mixture and a sprinkle of shredded cheese. Roll up the tortilla and place it seam-side down in the baking dish. Repeat with remaining tortillas.

    Add sauce and cheese

    Once all tortillas are in the dish, pour the remaining chilé sauce over the top. Sprinkle the remaining shredded cheese evenly over the sauce.

    Bake

    Cover with foil and bake for 20 minutes. Remove foil and bake for an additional 10 minutes, or until the cheese is bubbly and slightly golden.

    Let cool for a few minutes before serving. Garnish with additional chilé sauce, if desired.
