Enchiladas

Method

Cooking Steps

  1. 1

    Prepare the Filling

In a skillet, heat olive oil over medium heat. Add diced onion and sauté until translucent. Stir in refried beans and half of the cheddar cheese. Season with salt and mix until heated through.

  2. 2

    Assemble the Enchiladas

Preheat your oven to 375°F (190°C). Take a corn tortilla, fill it with a portion of the bean and cheese mixture, and roll it up tightly. Place seam side down in a greased baking dish. Repeat for all tortillas.

  3. 3

    Add Sauce and Cheese

Pour the chile sauce evenly over the rolled enchiladas. Sprinkle the remaining cheddar cheese on top.

  4. 4

    Bake the Enchiladas

Cover the baking dish with foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.

  5. 5

    Serve

Remove from the oven, let cool for a few minutes, then garnish with chopped cilantro and serve with sour cream on the side.
