Enchilada Filling and Sauce
Method
Preparation Steps
- 1
Prepare the Filling
In a skillet, heat olive oil over medium heat. Add diced onion and sauté until translucent. Add shredded chicken, refried beans, cilantro, salt, and pepper. Mix well and heat through.
- 2
Warm the Tortillas
In a separate pan, lightly warm the corn tortillas on both sides to make them pliable.
- 3
Assemble the Enchiladas
Spread a little chile sauce on the bottom of a baking dish. Place a spoonful of the chicken mixture in the center of each tortilla, roll it up, and place seam-side down in the baking dish.
- 4
Add Sauce and Cheese
Pour the remaining chile sauce over the assembled enchiladas and sprinkle with shredded cheese.
- 5
Bake
Preheat the oven to 350°F (175°C). Bake uncovered for about 20-25 minutes, or until the cheese is melted and bubbly.
- 6
Serve
Remove from the oven and let cool slightly. Garnish with additional cilantro if desired, and serve hot.
