Preheat the Oven
Preheat your oven to 350°F (175°C).

Prepare the Chicken Mixture
In a large bowl, combine the shredded chicken, half of the chile enchilada sauce, salt, and black pepper to taste. Mix until well combined.

Fill the Tortillas
Warm the tortillas in a skillet for a few seconds on each side until pliable. Spoon some of the chicken mixture onto each tortilla and roll them up tightly.

Assemble the Enchiladas
In a greased 9x13 inch baking dish, spread a layer of the remaining chile enchilada sauce on the bottom. Place the rolled tortillas seam side down in the dish. Pour the remaining enchilada sauce over the top and sprinkle with shredded cheese.

Cover the dish with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10 minutes or until the cheese is bubbly and golden.

Remove from the oven, let cool for a few minutes. Serve with sour cream and garnish with chopped green onions.
