Prepare the Filling

In a skillet, heat olive oil over medium heat. Add chopped onions and sauté until translucent, about 5 minutes. Stir in 1 cup of shredded cheese and season with salt and pepper. Remove from heat.

Assemble the Enchiladas

Preheat the oven to 350°F (175°C). Dip each corn tortilla in the enchilada sauce to soften. Place a spoonful of the cheese and onion mixture in the center of each tortilla, roll it up, and place seam-side down in a baking dish.

Add Sauce and Cheese

Once all tortillas are filled and placed in the baking dish, pour the remaining enchilada sauce over the top. Sprinkle the remaining shredded cheese evenly on top.

Bake

Cover the baking dish with foil and bake for 20 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.

Serve

Remove from the oven and let cool for a few minutes. Garnish with fresh cilantro if desired. Serve warm.
