    Prepare the Chili Sauce

    Remove the stems and seeds from the dried red chilies. In a pot, bring water to a boil and soak the chilies for about 15 minutes until they are soft.

    Blend the Sauce

    In a blender, combine the soaked chilies, garlic, cumin seeds, oregano, salt, black pepper, apple cider vinegar, and a little of the soaking liquid. Blend until smooth.

    Marinate the Ribs

    Place the pork ribs in a large bowl or resealable bag. Pour the blended chili sauce over the ribs, making sure they are well-coated. Marinate in the refrigerator for at least 2 hours, or preferably overnight.

    Cook the Ribs

    Preheat the oven to 300°F (150°C). In a large oven-safe pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent. Remove the ribs from the marinade and sear them in the pot until browned on all sides.

    Pour the remaining marinade over the ribs. Add water to the pot, cover, and transfer to the oven. Bake for about 2.5 to 3 hours, or until the ribs are tender.

    Once the ribs are tender, remove from the oven and let rest for a few minutes. Serve hot with your choice of sides.
