Marinate the Pork
In a large bowl, combine the red chile powder, minced garlic, ground cumin, salt, black pepper, and olive oil. Mix well to form a marinade. Add the pork cubes and coat evenly. Cover and refrigerate for at least 2 hours, preferably overnight.

Preheat the Oven
Preheat your oven to 300°F (150°C).

Prepare the Baking Dish
In a large baking dish, arrange the marinated pork cubes evenly. Pour in the water and sprinkle the chopped onion on top.

Bake the Pork
Cover the baking dish with aluminum foil and bake for about 3 hours or until the pork is tender and easily pulls apart with a fork.

Add Cheese
Remove the foil for the last 15 minutes of cooking. Sprinkle the shredded cheddar cheese over the pork and return to the oven until the cheese is melted and bubbly.

Serve
Remove from the oven, let cool slightly, then serve garnished with additional chopped onions if desired.
