Brisket Enchiladas

    Prepare the Filling

    In a skillet, heat the cooking oil over medium heat. Add the diced onion and sauté until translucent. Add the shredded brisket, salt, and pepper. Mix well and heat until warmed through.

    Assemble Enchiladas

    Preheat the oven to 350°F (175°C). Take a tortilla, fill it with a generous amount of the brisket mixture, and roll it up tightly. Place the rolled tortilla seam-side down in a greased baking dish. Repeat with remaining tortillas.

    Add Sauce and Cheese

    Pour either red or green enchilada sauce over the assembled enchiladas, covering them completely. Sprinkle shredded cheese on top.
