    Prepare the Filling

    In a skillet, heat olive oil over medium heat. Add the diced onion and minced garlic, sauté until the onion is translucent, about 5 minutes. Stir in the shredded brisket, season with salt and pepper, and mix well. Cook for another 2-3 minutes, then remove from heat.

    Assemble the Enchiladas

    Preheat your oven to 375°F (190°C). To assemble, take a corn tortilla, fill it with the brisket mixture, and sprinkle with some chopped cilantro and cheese. Roll the tortilla tightly and place it seam-side down in a greased baking dish. Repeat with the remaining tortillas.

    Add Sauce and Cheese

    Once all the tortillas are assembled in the baking dish, pour the enchilada sauce evenly over the top. Sprinkle the remaining cheese on top of the sauce.
