Preparation and Assembly

Prepare the Sopaipilla Dough
In a large mixing bowl, combine the sopaipilla dough ingredients. Knead until smooth, then let rest for 30 minutes.

Cook the Papitas
In a skillet, heat a little oil over medium heat. Add the diced papitas and cook until golden brown and tender, about 10-12 minutes. Season with salt and pepper.

Fry the Sopaipillas
Roll out the rested dough and cut it into small rounds. Heat oil in a deep pan over medium heat. Fry the dough rounds until puffed and golden, about 2-3 minutes per side. Drain on paper towels.

Assemble the Sliders
Take one sopaipilla, layer with scrambled eggs, cooked papitas, your choice of protein, and a sprinkle of aged cheddar cheese. Drizzle with Sadie's Red or Green Chile. Top with another sopaipilla to create a slider.

Serve the breakfast sopaipilla sliders warm, with extra chile on the side if desired.
