Three Sopaipilla Sliders filled with Scrambled Eggs, Papitas, and Aged Cheddar Cheese with your choice of Bacon, Sausage, Ham, Chorizo, Pork Belly Chicharrónes, or Carne Adovada, and Sadie's Red or Green Chile.

Preparation and Assembly

    Prepare the Sopaipilla Dough

    In a large mixing bowl, combine the sopaipilla dough ingredients. Knead until smooth, then let rest for 30 minutes.

    Cook the Papitas

    In a skillet, heat a little oil over medium heat. Add the diced papitas and cook until golden brown and tender, about 10-12 minutes. Season with salt and pepper.

    Scramble the Eggs

    In a bowl, whisk together the eggs, salt, and pepper. Pour into a heated skillet and scramble until just set. Remove from heat.

    Fry the Sopaipillas

    Roll out the rested dough and cut it into small rounds. Heat oil in a deep pan over medium heat. Fry the dough rounds until puffed and golden, about 2-3 minutes per side. Drain on paper towels.

    Assemble the Sliders

    Take one sopaipilla, layer with scrambled eggs, cooked papitas, your choice of protein, and a sprinkle of aged cheddar cheese. Drizzle with Sadie's Red or Green Chile. Top with another sopaipilla to create a slider.
