    Prepare the Papitas

    Peel and dice the potatoes into small cubes. Heat oil in a skillet over medium heat, add the potatoes, season with salt and pepper, and cook until golden brown and crispy, about 10-15 minutes. Stir occasionally.

    Cook the Meat

    In another skillet, cook your choice of meat (bacon, chorizo, etc.) until fully cooked and crispy. Remove from heat and set aside.

    Scramble the Eggs

    In a bowl, whisk the eggs with salt and pepper. In the same skillet used for the meat, pour in the eggs and scramble them over medium heat until just set. Mix in the aged cheddar cheese until melted.

    Assemble the Burrito

    Warm the tortillas slightly in a pan or microwave. On each tortilla, spread a layer of frijoles, followed by the scrambled eggs, cooked papitas, and your choice of meat. Top with lettuce, tomatoes, onions, and chile.

    Roll the Burrito

    Fold in the sides of the tortilla and roll tightly from the bottom up. Repeat for remaining tortillas.

    Serve

    Serve the burritos warm with extra frijoles and any additional toppings you desire.
