    Cook the Beef Filling

    In a large skillet, heat olive oil over medium heat. Add chopped onion and cook until translucent, about 3-4 minutes. Stir in minced garlic and cook for an additional 1 minute.

    Add Spices and Beef

    Add ground beef to the skillet, breaking it apart with a spatula. Sprinkle in chile powder, cumin, and salt. Cook until the beef is browned and fully cooked, about 7-10 minutes. Remove from heat and set aside.

    Assemble the Enchiladas

    Preheat the oven to 375°F (190°C). In a baking dish, spread a thin layer of enchilada sauce on the bottom. Take a tortilla, fill it with a scoop of the beef mixture, a sprinkle of cheese, and roll it up. Place seam side down in the baking dish.

    Repeat and Top

    Repeat the process for all tortillas. After all enchiladas are in the baking dish, pour the remaining enchilada sauce over the top and sprinkle with the remaining cheese.

    Cover with foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10-15 minutes or until the cheese is bubbly and golden.
