Prepare the Brisket
Preheat your oven to 300°F (150°C). Trim any excess fat from the brisket and pat it dry with paper towels.

Season the Brisket
In a small bowl, combine salt, black pepper, garlic powder, onion powder, and smoked paprika. Rub this spice mixture all over the brisket.

Sear the Brisket
In a large oven-safe skillet or Dutch oven, heat olive oil over medium-high heat. Once hot, add the brisket and sear for about 4-5 minutes on each side until browned.

Add Broth and Herbs
Pour the beef broth into the skillet around the brisket and add the fresh rosemary and thyme on top.

Cook the Brisket
Cover the skillet with a lid or aluminum foil and transfer it to the preheated oven. Cook for about 3 hours, or until the brisket is fork-tender.

Rest and Slice
Remove the brisket from the oven and let it rest for 15-20 minutes before slicing against the grain. Serve with the cooking juices.
