    Cook the linguine

    In a large pot of boiling salted water, cook the linguine according to package instructions until al dente. Drain and set aside.

    Sauté the shallots and garlic

    In a large skillet over medium heat, melt the butter. Add the minced shallots and sauté for 2-3 minutes until translucent. Add the minced garlic and sauté for an additional minute until fragrant.

    Cook the shrimp

    Add the butterflied shrimp to the skillet and cook for about 2-3 minutes on each side, or until they turn pink and opaque.

    Add wine and tomatoes

    Pour in the white wine and add the halved cherry tomatoes. Stir to combine and allow the mixture to simmer for about 5 minutes, allowing the alcohol to cook off.

    Combine with linguine

    Add the cooked linguine to the skillet. Toss to combine all the ingredients thoroughly.

    Finish with lemon and seasonings

    Squeeze the juice of one lemon over the pasta and add chopped parsley, grated Parmigiano Reggiano, red pepper flakes, salt, and black pepper. Toss again until everything is well mixed.

    Serve the shrimp scampi immediately, garnished with extra parsley and Parmigiano Reggiano if desired.
