Preparation Steps

  1. 1

    Prepare the Pulled Pork

If you don't have pre-cooked Cuban pulled pork, cook pork shoulder with spices, onions, and garlic until tender and shred it.

  2. 2

    Make Caramelized Onions

In a skillet, add sliced onions with a bit of oil over medium heat. Cook slowly, stirring occasionally until they turn golden brown, about 20-25 minutes.

  3. 3

    Prepare Candied Jalapenos

In a saucepan, combine sliced jalapenos with sugar and vinegar. Cook over medium heat until the mixture thickens and the jalapenos are coated, about 10-15 minutes.

  4. 4

    Chop Tomatoes and Cilantro

Dice the tomatoes and roughly chop the fresh cilantro, setting them aside for topping.

  5. 5

    Assemble the Nachos

Preheat the oven to 180°C (350°F). Spread tortilla chips on a baking sheet. Layer with pulled pork, caramelized onions, candied jalapenos, and mozzarella cheese.

  6. 6

    Bake the Nachos

Bake in the preheated oven for about 10-15 minutes, or until the cheese is melted and bubbly.

  7. 7

    Finish and Serve

Remove nachos from the oven, top with diced tomatoes and chopped cilantro. Serve immediately.
