Roasted V Campari Tomatoes

Pizza Assembly

Method

Tomato Sauce

  1. 1

    Sauté the Garlic

In a saucepan over medium heat, add 2 tablespoons of olive oil. Once hot, add 2 teaspoons of minced garlic and sauté until fragrant, about 30 seconds.

  2. 2

    Add Tomatoes

Pour in the canned whole tomatoes (400 g), including their juice. Use a spoon to break them up slightly.

  3. 3

    Season the Sauce

Stir in 1 teaspoon of dried oregano, 1 teaspoon of salt, 0.5 teaspoon of black pepper, and 1 teaspoon of sugar. Let the sauce simmer for 20-25 minutes, stirring occasionally until thickened.

Roasted V Campari Tomatoes

  1. 4

    Preheat the Oven

Preheat your oven to 200°C (400°F).

  2. 5

    Prepare the Tomatoes

Slice the V Campari tomatoes in half and place them cut side up on a baking sheet. Drizzle with 2 tablespoons of olive oil, then sprinkle with 0.5 teaspoon of salt and 0.5 teaspoon of black pepper.

  3. 6

    Roast the Tomatoes

Roast in the preheated oven for about 25-30 minutes until they are tender and slightly caramelized. Remove from the oven and let cool slightly.

  4. 7

    Finish with Basil

Once cooled, sprinkle fresh basil leaves over the roasted tomatoes.

Pizza Assembly

  1. 8

    Preheat the Oven

While the tomatoes are roasting, preheat your oven to the highest setting (around 250°C or 482°F). If using a pizza stone, place it in the oven to heat up.

  2. 9

    Prepare the Pizza Dough

Roll out the pizza dough on a floured surface to your desired thickness, about 10-12 inches in diameter.

  3. 10

    Add Sauce and Cheese

Spread a generous layer of the prepared tomato sauce over the dough. Top with slices of fresh mozzarella cheese (250 g) and the roasted V Campari tomatoes.

  4. 11

    Bake the Pizza

Transfer the pizza to the preheated oven (or onto the hot pizza stone) and bake for 10-12 minutes until the crust is golden and the cheese is bubbly.

  5. 12

    Garnish and Serve

Remove from the oven and sprinkle with fresh basil leaves and grated Parmesan cheese (50 g). Slice and serve hot.
