Mushrooms

    Prepare the Mushrooms

    Clean the oyster mushrooms with a damp cloth and trim the stems. Slice them into bite-sized pieces.

    Sauté

    In a large skillet, melt 2 tablespoons of butter over medium heat. Add the sliced shallots and cook until translucent, about 3 minutes.

    Add Garlic and Herbs

    Stir in minced garlic, fresh thyme, parsley, salt, and black pepper. Cook for another minute until fragrant.

    Cook Mushrooms

    Add the oyster mushrooms to the skillet. Sauté for 5-7 minutes until they are golden brown and tender. Remove from heat.

Matchstick Potatoes

    Prepare the Potatoes

    Peel the potatoes and cut them into matchstick-sized pieces.

    Fry the Potatoes

    In a large pot, heat vegetable oil over medium-high heat. Once hot, add the matchstick potatoes in batches and fry until golden brown, about 3-4 minutes per batch. Drain on paper towels and sprinkle with salt.

    Fry the Eggs

    In a non-stick skillet, melt 1 tablespoon of butter over medium heat. Crack the eggs into the skillet and cook until the whites are set but the yolks are still runny, about 2-3 minutes. Season with salt and pepper.

Chimichurri

    Make the Chimichurri

    In a food processor, combine parsley, cilantro, garlic, red wine vinegar, olive oil, red pepper flakes, and salt. Blend until smooth and well combined.
