    Prepare the Potatoes

    Wash the fingerling potatoes thoroughly under cold water to remove any dirt. Pat them dry with a kitchen towel.

    Cut the Potatoes

    Cut the fingerling potatoes in half lengthwise. This helps them cook evenly and increases the surface area for frying.

    Heat the Oil

    In a large, deep frying pan or pot, heat the vegetable oil over medium-high heat. Use enough oil to completely submerge the potatoes.

    Fry the Potatoes

    Once the oil is hot (around 350°F / 175°C), carefully add the halved fingerling potatoes in batches. Fry them for about 5-7 minutes, or until they are golden brown and crispy. Be sure to stir occasionally to prevent sticking.

    Drain and Season

    Using a slotted spoon, remove the fried potatoes from the oil and place them on a plate lined with paper towels to drain excess oil. Immediately season with salt, pepper, and garlic powder while they are hot.

    Make the Miso Aioli

    In a bowl, combine the miso paste, mayonnaise, lemon juice, and water. Whisk until smooth and creamy. Adjust the consistency by adding more water if needed.

    Plate the fried fingerlings and serve them hot with the miso aioli on the side for dipping.
