    Start by rinsing the fresh clams under cold water to remove any sand and grit. Soak them in a bowl of fresh water for about 30 minutes to help expel any remaining sand.

    Cook the Sausage

    In a large pot or deep skillet, heat the olive oil over medium heat. Remove the sausage from its casing and crumble it into the pot. Cook for about 5-7 minutes, stirring occasionally, until browned and cooked through.

    Add the minced garlic and diced shallots to the pot with the sausage. Sauté for an additional 2-3 minutes until the garlic is fragrant and the shallots are translucent.
