    Prepare the Beets

    Start by preheating your smoker to 225°F (107°C). While the smoker is heating, wash the beets thoroughly under running water to remove any dirt. Cut off the tops and tails of the beets, leaving the skin on for smoking.

    Season the Beets

    In a large bowl, combine olive oil, smoked paprika, garlic powder, salt, and black pepper. Toss the cleaned beets in the mixture until they are evenly coated.

    Smoke the Beets

    Place the seasoned beets directly on the smoker rack or in a grilling basket. Smoke the beets for about 1.5 to 2 hours or until they are tender when pierced with a fork.

    Cool and Peel

    Once the beets are done smoking, remove them from the smoker and allow them to cool for 10-15 minutes. Once cooled, peel off the skin using your fingers or a paper towel.

    In a small bowl, mix the apple cider vinegar and finely chopped parsley together to create a fresh glaze.
