Method
Preparation
Preheat the oven
Preheat your oven to 425°F (220°C).
Melt the chocolate and butter
In a microwave-safe bowl, combine the unsalted butter and semi-sweet chocolate. Microwave in 30-second intervals, stirring in between, until melted and smooth.
Mixing the Batter
Combine dry ingredients
In another bowl, whisk together the flour, granulated sugar, cocoa powder, baking powder, and salt until well combined.
Mix wet ingredients
Add the eggs, egg yolk, and vanilla extract to the melted chocolate mixture. Stir until fully combined.
Combine mixtures
Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Do not overmix.
Baking
Fill the ramekins
Divide the batter evenly among the prepared ramekins, filling each about 3/4 full.
Bake
Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes, or until the edges are set but the center is still soft.
Cool before serving
Remove from the oven and let the cakes cool for 1 minute. Carefully run a knife around the edges and invert onto plates.
Serving Suggestions
Add toppings
Dust with powdered sugar and serve warm with a scoop of vanilla ice cream and fresh berries, if desired.
