Prepare the Raspberry Puree
In a blender, combine the fresh raspberries, sugar, and water. Blend until smooth.

Strain the Mixture
Pass the raspberry puree through a fine mesh sieve into a bowl to remove the seeds.

Mix in Remaining Ingredients
Stir in the lemon juice and vanilla extract into the strained raspberry mixture.

Chill the Mixture
Cover the bowl and refrigerate the mixture for about 1 hour until it's cold.

Freeze the Sorbet
Pour the chilled mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.

Transfer the sorbet to an airtight container and freeze for at least 2 hours to firm up before serving.
