Swordfish and Sorrel Sauce

Preparation and Cooking

    Marinate the Swordfish

    In a bowl, mix olive oil, lemon juice, minced garlic, salt, and black pepper. Add swordfish steaks and coat well. Let marinate for at least 30 minutes.

    Prepare the Sorrel Sauce

    In a saucepan over medium heat, combine chopped sorrel leaves and heavy cream. Cook until the sorrel wilts and the mixture thickens, about 5 minutes. Stir in grated Parmesan cheese and season with salt and pepper to taste.

    Grill the Swordfish

    Preheat the grill to medium-high heat. Remove swordfish from marinade and place on the grill. Cook for about 4-5 minutes per side or until the fish is opaque and easily flakes with a fork.

    Prepare the Vegetables

    While the swordfish is grilling, steam or sauté the chef selected vegetables until tender.
