    Prepare the Potatoes

    Wash and peel the Russet potatoes. Cut them into thin shoestring slices, about 1/8 inch thick.

    Soak the Potatoes

    Place the cut potatoes in a bowl of cold water and soak for at least 30 minutes to remove excess starch.

    Heat the Oil

    In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

    Dry the Potatoes

    After soaking, drain the potatoes and pat them dry with paper towels to remove excess moisture.

    Fry the Potatoes

    Carefully add the dried potatoes to the hot oil in batches. Fry for about 3-4 minutes or until they are golden brown and crispy.

    Drain and Season

    Remove the fries from the oil and drain them on paper towels. While they are still hot, sprinkle with salt and black pepper to taste.

    Serve the shoestring fries hot as a side dish or snack.
