    Melt the Chocolate

    Chop the dark chocolate into small pieces and place them in a heatproof bowl. Melt the chocolate over a double boiler or in the microwave, stirring occasionally until smooth. Set aside to cool slightly.

    Separate the Eggs

    Separate the egg yolks from the egg whites into two separate bowls. Make sure no egg yolk gets into the egg whites.

    Whip the Egg Whites

    Using an electric mixer, beat the egg whites with a pinch of salt until stiff peaks form. Gradually add 50 g of granulated sugar while continuing to beat until glossy and firm.

    Mix Egg Yolks and Sugar

    In another bowl, whisk the egg yolks with the remaining sugar (50 g) until pale and creamy. Add the melted chocolate and vanilla extract, mixing until well combined.

    Combine Mixtures

    Gently fold the whipped egg whites into the chocolate mixture in three additions, being careful not to deflate the egg whites.

    Whip the Cream

    In a separate bowl, whip the heavy cream until soft peaks form. Gently fold the whipped cream into the chocolate mixture until fully incorporated.

    Chill the Mousse

    Spoon the mousse into serving dishes or cups and refrigerate for at least 2 hours, or until set.

    Serve

    Garnish with chocolate shavings or whipped cream if desired, and serve chilled.
