Preparation and Cooking

    Prepare the Rice

    In a medium saucepan, combine the basmati rice and water. Bring to a boil, then reduce the heat to low, cover, and simmer for about 15 minutes or until the rice is tender and the water is absorbed. Fluff with a fork and season with salt to taste.

    Season the Salmon

    Pat the salmon fillets dry with paper towels. Rub both sides with olive oil and then coat generously with cajun seasoning.

    Cook the Salmon

    Heat a large skillet over medium-high heat. Once hot, add the salmon fillets and cook for 4-5 minutes on each side, or until the salmon is blackened and cooked to your liking. Remove from heat.

    Prepare the Mustard Sauce

    In a small bowl, whisk together the grain mustard, honey, and lemon juice until smooth. Adjust seasoning with salt and pepper to taste.

    Serve

    Plate the cooked basmati rice, then top with the blackened salmon. Drizzle the grain mustard sauce over the salmon and serve immediately.
